EASY QUICK CHICKEN NOODLE SOUP
The cold weather is approaching quick! This is a quick easy cheap recipe when you're short on time & money. Serve with a nice bread and you have the perfect fall meal.
1 46 ounce can chicken broth or homemade chicken stock (It's easy to make)
1/2 lb boneless skinless chicken, cubed
2 cups uncooked egg noodles
1 cup sliced carrot
1/2 cup chopped onion
1/3 cup sliced celery
1 teaspoon parsley
1/4 teaspoon ground black pepper
Throw it all in a big saucepan and simmer 20 minutes.
Crispy Baked Potatoes
Delicious served with the Melt In Your Mouth Chicken! Another Family favorite!
2 medium baking potatoes (6 - 8 oz. each)
2 tablespoons of melted butter
1/4 teaspoon garlic salt or 1/4 teaspoon seasoning salt
1/8 teaspoon pepper
sour cream, as topping
Scrub potatoes thoroughly with a vegetable brush.
Cut potatoes in half lengthwise.
In an 11" x 7" x 1 1/2" or 9" x 9" x 2" baking pan, combine melted butter, garlic or seasoned salt, and pepper.
Place potatoes, cut side down, in butter mixture.
Bake in a 450°F oven for 25 to 30 minutes or until tender and cut sides of potatoes are browned and crispy.
Lift out with a spatula.
If desired, serve with sour cream
Melt in Your Mouth Chicken
Definitely not diet chicken but really easy and moist. Substitute light mayo & cheese or decrease amounts to lighten it up. The whole family loves this!
4 boneless chicken breast halves
1 cup mayonnaise
1/2 cup freshly grated parmesan cheese
1 1/2 teaspoons seasoning salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
Mix mayonnaise, cheese and seasonings.
Spread mixture over chicken breast and place in baking dish.
Bake at 375°F for 45 minutes.
